Vegetarian Taco Skillet

A delicious and hearty vegetarian dish that is perfect for weeknight dinners.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 can (14 ounces) diced tomatoes, with juices
  • 2 teaspoons taco seasoning
  • 1 cup shredded cheese (optional)
  • Fresh cilantro, for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add chopped onion and bell pepper, sauté until soft.
  3. Stir in garlic and cook for another minute.
  4. Add black beans, corn, diced tomatoes, and taco seasoning. Mix well.
  5. Simmer for 10 minutes until heated through.
  6. Sprinkle cheese on top, if using, and cover to melt.
  7. Garnish with fresh cilantro before serving.

Notes

  • This dish can be customized with your choice of vegetables.
  • For extra flavor, add jalapeños or avocado.
