Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the pumpkin puree, brown sugar, granulated sugar, softened butter, egg, and vanilla extract until well combined.
  3. In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, ginger, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Fold in the chocolate chips.
  5. Drop rounded tablespoons of dough onto a lined baking sheet, spacing them about 2 inches apart.
  6. Bake for 12-15 minutes or until the edges are set.
  7. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
