Thai Red Curry Dumpling Soup

A comforting and delicious soup made with flavorful Thai red curry and dumplings.

  • 1 tablespoon vegetable oil
  • 1 cup onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons red curry paste
  • 4 cups vegetable broth
  • 1 can coconut milk
  • 1 cup carrots, sliced
  • 1 cup snap peas
  • 300 grams dumplings (store-bought or homemade)
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onions and sauté until translucent.
  3. Stir in the garlic and ginger, cooking for another minute.
  4. Add the red curry paste and cook, stirring for about 2 minutes.
  5. Pour in the vegetable broth and coconut milk, then bring to a simmer.
  6. Add the carrots and snap peas, cooking until just tender, about 5 minutes.
  7. Gently add the dumplings and cook according to package instructions.
  8. Stir in soy sauce and lime juice, then remove from heat.
  9. Garnish with fresh cilantro before serving.

Notes

  • This soup can be made with chicken or shrimp instead of dumplings if desired.
  • Adjust the level of spiciness by adding more or less red curry paste.
