- 1 tablespoon vegetable oil
- 1 cup onions, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons red curry paste
- 4 cups vegetable broth
- 1 can coconut milk
- 1 cup carrots, sliced
- 1 cup snap peas
- 300 grams dumplings (store-bought or homemade)
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1/4 cup fresh cilantro, chopped
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onions and sauté until translucent.
- Stir in the garlic and ginger, cooking for another minute.
- Add the red curry paste and cook, stirring for about 2 minutes.
- Pour in the vegetable broth and coconut milk, then bring to a simmer.
- Add the carrots and snap peas, cooking until just tender, about 5 minutes.
- Gently add the dumplings and cook according to package instructions.
- Stir in soy sauce and lime juice, then remove from heat.
- Garnish with fresh cilantro before serving.
Notes
- This soup can be made with chicken or shrimp instead of dumplings if desired.
- Adjust the level of spiciness by adding more or less red curry paste.
