  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon ginger, minced
  • 1 cup carrots, grated
  • 1 cup cucumber, sliced
  • 1 cup red bell pepper, sliced
  • 4 large tortillas

Instructions

  1. In a bowl, mix peanut butter, soy sauce, honey, rice vinegar, and ginger until smooth.
  2. Lay a tortilla flat and spread a generous amount of the peanut sauce.
  3. Top with shredded chicken, carrots, cucumber, and bell pepper.
  4. Roll the tortilla tightly and slice in half.
  5. Serve with extra peanut sauce on the side.
