  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 avocado, diced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 lime, juiced
  • salt to taste
  • 1 tablespoon olive oil
  • fresh cilantro for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Dice the sweet potatoes and toss with olive oil, chili powder, cumin, and salt.
