  • 1 cup corn kernels
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon garlic powder
  • 1 tablespoon olive oil
  • ½ cup Cotija cheese, crumbled
  • ¼ cup cilantro, chopped
  • 1 lime, juiced

Instructions

  1. In a skillet, heat olive oil over medium heat. Add diced chicken and cook until browned and cooked through, about 5-7 minutes.
  2. Stir in corn, chili powder, cumin, and garlic powder. Cook for another 3-4 minutes until corn is heated through.
