  • 2 cups all-purpose flour
  • 3 large eggs
  • 1 cup ricotta cheese
  • 1 cup fresh spinach, chopped

  • 1 teaspoon salt
  • 1 tablespoon olive oil

Instructions

  1. In a mixing bowl, combine the flour and salt.
  2. Make a well in the center and add the eggs. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 10 minutes.
  4. Wrap the dough in plastic wrap and let it rest for 30 minutes.
  5. In another bowl, mix together the ricotta, spinach, Parmesan cheese, and olive oil.
  6. Roll out the dough and cut into circles.
  7. Place a small amount of the filling in the center of each circle.
  8. Fold the dough over the filling and seal the edges.
  9. Boil in salted water for about 3-4 minutes until they float.
