- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or fresh
- 1 red bell pepper, diced
- 1 avocado, sliced
- 1 tsp cumin
- 1 tsp chili powder
- 4 large tortillas
- 1 cup shredded cheese (optional)
- 1/4 cup cilantro, chopped
- In a large bowl, combine black beans, corn, diced red bell pepper, cumin, chili powder, and cilantro.
- Lay a tortilla flat and place a generous scoop of the bean mixture in the center.
- Add avocado slices and cheese if using.
- Fold the sides of the tortilla over the filling and roll it up tightly.
