A delicious and easy recipe for Southwest Black Bean & Corn Grilled Wraps that are perfect for a quick meal.

  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or fresh
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 4 large tortillas
  • 1 cup shredded cheese (optional)
  • 1/4 cup cilantro, chopped

Instructions

  1. In a large bowl, combine black beans, corn, diced red bell pepper, cumin, chili powder, and cilantro.
  2. Lay a tortilla flat and place a generous scoop of the bean mixture in the center.
  3. Add avocado slices and cheese if using.
  4. Fold the sides of the tortilla over the filling and roll it up tightly.
  5. Heat a grill pan over medium heat and grill the wraps for 2-3 minutes on each side, or until golden brown.
  6. Slice the wraps in half and serve warm.
