Slow Cooker Stuffed Bell Peppers

A delicious and healthy take on stuffed bell peppers using turkey bacon.

  • 4 large bell peppers
  • 1 pound ground turkey
  • 4 strips turkey bacon
  • 1 cup cooked quinoa
  • 1 cup diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt to taste
  • 1 cup shredded cheese

Instructions

  1. Prepare the bell peppers by cutting off the tops and removing the seeds.
  2. In a skillet, cook the turkey bacon until crispy, then chop it into small pieces.
  3. In a large bowl, mix the ground turkey, quinoa, diced tomatoes, cooked turkey bacon, and seasonings.
  4. Stuff each pepper with the turkey mixture and place them in the slow cooker.
  5. Top with shredded cheese.
  6. Cook on low for 6-8 hours or until the peppers are tender.
