Slow Cooker Parmesan Garlic Chicken and Potatoes

  • 4 boneless, skinless chicken breasts
  • 1 pound baby potatoes
  • 1/4 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Place the chicken breasts in the bottom of the slow cooker.
  2. Layer the baby potatoes on top of the chicken.
  3. In a small bowl, mix together the Parmesan cheese, garlic, basil, oregano, salt, pepper, and olive oil.
  4. Pour the cheese mixture over the chicken and potatoes, coating them evenly.
  5. Cover and cook on low for 6-7 hours or until the chicken is cooked through and the potatoes are tender.
  6. Serve garnished with fresh parsley.

Notes

  • For added flavor, marinate the chicken in the Parmesan mixture for a few hours before cooking.
