- 2 pounds short rib
- 1 tablespoon olive oil
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes (28 oz)
- 1 cup beef broth
- 2 sprigs fresh thyme
- 1 bay leaf
- 4 cups mashed potatoes
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- In a large pot, heat olive oil over medium heat. Add short ribs and brown on all sides.
- Add chopped onion and garlic; sauté until softened.
- Stir in diced tomatoes, beef broth, thyme, and bay leaf. Bring to a simmer.
- Cover and cook for 2-3 hours until meat is tender.
- While the ragu is cooking, prepare the mashed potatoes and mix in Parmesan cheese.
- Once the ragu is done, shred the meat and return to the pot. Season with salt and pepper.
- Serve the ragu over the Parmesan mashed potatoes.
Notes
- For extra flavor, add red wine to the ragu.
- Let the ragu sit for a day for deeper flavors.
