Short Rib Ragu with Parmesan Mashed Potatoes

Ingredients

  • 2 pounds short rib
  • 1 tablespoon olive oil
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (28 oz)
  • 1 cup beef broth
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • 4 cups mashed potatoes
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add short ribs and brown on all sides.
  2. Add chopped onion and garlic; sauté until softened.
  3. Stir in diced tomatoes, beef broth, thyme, and bay leaf. Bring to a simmer.
  4. Cover and cook for 2-3 hours until meat is tender.
  5. While the ragu is cooking, prepare the mashed potatoes and mix in Parmesan cheese.
  6. Once the ragu is done, shred the meat and return to the pot. Season with salt and pepper.
  7. Serve the ragu over the Parmesan mashed potatoes.

Notes

  • For extra flavor, add red wine to the ragu.
  • Let the ragu sit for a day for deeper flavors.
