Sheet Pan Chicken Pitas with Herby Ranch

  • 1 pound boneless chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt to taste
  • Fresh pepper to taste
  • 4 whole grain pitas
  • 1 cup mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup herby ranch dressing

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Add the chicken thighs to the bowl and coat well with the mixture.
  4. Spread the chicken in a single layer on a baking sheet.
  5. Roast in the oven for about 20-25 minutes or until fully cooked.
  6. During the last five minutes, add the cherry tomatoes to the sheet to roast them.
  7. Once done, remove from the oven and let it rest for a few minutes.
  8. Slice the chicken and place inside the pitas with mixed greens and roasted tomatoes.
  9. Drizzle with herby ranch dressing before serving.

Notes

  • For a spicier kick, add cayenne pepper to the chicken mix.
  • Use leftover chicken in salads or wraps for a quick lunch.
