Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a bowl, mix pumpkin puree, granulated sugar, brown sugar, and vegetable oil until well combined.
  3. Add eggs and vanilla, mixing thoroughly.
  4. In another bowl, whisk together flour, baking powder, baking soda, spices, and salt.
  5. Gradually add dry ingredients to pumpkin mixture, stirring until just combined.
  6. In a separate bowl, beat cream cheese with powdered sugar until smooth.
  7. Fill muffin cups halfway with batter, add a dollop of cream cheese mixture, then top with more batter.
  8. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  9. Let cool before serving.
