  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin spice
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1 cup mini marshmallows

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together pumpkin puree, brown sugar, granulated sugar, and butter until smooth.
  3. Add eggs and vanilla extract, beating until well combined.
  4. In another bowl, whisk together flour, baking soda, pumpkin spice, and salt.
  5. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  6. Fold in chocolate chips and mini marshmallows.
  7. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until the edges are golden.
  9. Allow to cool for a few minutes before transferring to a wire rack.

Notes

  • For extra s’mores flavor, add crushed graham crackers into the dough.
  • Store leftover cookies in an airtight container.
