Instructions

  1. Preheat the oven to 350Β°F (175Β°C) and line a muffin pan with muffin liners.
  2. In a large bowl, combine pumpkin puree, cottage cheese, and eggs.
  3. In another bowl, mix together the whole wheat flour, brown sugar, baking powder, baking soda, pumpkin spice, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
