- 6 slices turkey bacon
- 2 pounds pork shoulder, cut into cubes
- 1 tablespoon olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 medium apples, cored and chopped
- 1 cup prunes, pitted and chopped
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- In the same pot, add olive oil and pork shoulder, browning on all sides.
- Add diced onion and minced garlic; sauté until transparent.
- Pour in chicken broth and bring to a simmer.
- Add apples, prunes, thyme, salt, and pepper.
- Cover and cook for 1.5 to 2 hours, until pork is tender.
- Serve hot, topped with crispy bacon.
Notes
- For a thicker stew, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir into the stew before serving.
