  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup sour cream
  • 1 cup sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups peaches, sliced
  • 1 tablespoon cinnamon

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined. Press into the bottom of a springform pan.
  3. In another bowl, beat the cream cheese and sugar until smooth. Add sour cream, eggs, and vanilla extract, mixing until combined.
  4. Pour the cheesecake mixture over the crust and bake for 45-50 minutes.
  5. While baking, prepare the peach topping by combining sliced peaches and cinnamon in a pan over medium heat until soft.
  6. Once the cheesecake is done, let it cool, then top with the peach mixture before refrigerating for at least 4 hours before serving.
