Pan-Seared Cod in White Wine Tomato Basil Sauce

Ingredients

  • 4 fillets cod
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup white wine
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season cod fillets with salt and pepper.
  3. Place cod in the skillet, cooking for about 4-5 minutes on each side until golden brown.
  4. Remove cod and set aside.
  5. In the same skillet, add garlic and sauté until fragrant.
  6. Add cherry tomatoes and cook until they begin to soften.
  7. Pour in white wine and bring to a simmer.
  8. Stir in fresh basil.
  9. Return cod to the skillet and cook together for an additional 2 minutes.
  10. Serve warm, drizzled with sauce.
