One-Pot Spinach Tomato Pasta

A quick and comforting one-pot pasta dish featuring spinach and tomatoes.

Ingredients

  • 8 ounces pasta of choice
  • 2 cups fresh spinach
  • 1 can diced tomatoes
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 teaspoon Italian seasoning
  • salt to taste
  • pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat and sauté garlic until fragrant.
  2. Add diced tomatoes and cook for a few minutes.
  3. Pour in enough water or broth to cook the pasta, then add the pasta.
  4. Stir in Italian seasoning, salt, and pepper, and bring to a boil.
  5. Reduce heat and simmer until pasta is cooked al dente.
  6. Stir in fresh spinach and cook until wilted.
  7. Serve warm.

Notes

  • For added flavor, include grated Parmesan cheese on top.
