- 4 slices turkey bacon
- 4 large eggs
- 1 cup shredded cheese
- 1/2 cup diced bell peppers
- 1/4 cup chopped green onions
- 1 tsp salt
- 1/2 tsp black pepper
- Preheat the oven to 375°F (190°C).
- In a skillet, cook the turkey bacon until crispy, then chop.
- In a bowl, mix hash browns, chopped bacon, diced bell peppers, and half the cheese.
- Press the mixture into muffin tins and bake for 15 minutes.
