Loaded Bacon and Egg Hash Brown Muffins

  • 2 cups hash browns
  • 4 slices turkey bacon
  • 4 large eggs
  • 1 cup shredded cheese
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped green onions
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook the turkey bacon until crispy, then chop.
  3. In a bowl, mix hash browns, chopped bacon, diced bell peppers, and half the cheese.
  4. Press the mixture into muffin tins and bake for 15 minutes.
  5. In another bowl, whisk the eggs, salt, and pepper together.
  6. Pour the egg mixture into the muffin tins over the hash brown base.
  7. Top with remaining cheese and green onions.
  8. Bake for another 15-20 minutes, or until the eggs are set.
