Honey BBQ Chicken Rice – The Best 1-Pan Family Dinner (50 Min)

A quick and delicious one-pan dinner that the whole family will love.

Ingredients

  • 1 pound chicken thighs
  • 1 cup rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup mixed vegetables (frozen or fresh)

Instructions

  1. In a large pan, heat olive oil over medium heat.
  2. Add chicken thighs and season with garlic powder, onion powder, salt, and pepper. Cook until browned.
  3. Pour in the rice and stir to combine.
  4. Add chicken broth and BBQ sauce. Stir again.
  5. Bring to a boil, cover, and reduce heat. Simmer for 20 minutes.
  6. Add mixed vegetables and cook for another 5-10 minutes until the rice is tender and water is absorbed.
  7. Fluff with a fork and serve.

Notes

  • For extra flavor, marinate the chicken in BBQ sauce for an hour before cooking.
  • You can substitute chicken thighs with chicken breasts if preferred.
