High Protein Creamy Taco Soup

A deliciously creamy taco soup packed with protein from turkey bacon and chicken ham.

Ingredients

  • 1 pound turkey bacon
  • 2 cups chicken ham, diced
  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 4 cups chicken broth
  • 1 tablespoon taco seasoning
  • 1 cup cream
  • 1 cup shredded cheese
  • 1 bell pepper, diced
  • 1 onion, chopped

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and chop into pieces.
  2. Add the onions and bell pepper to the pot and sauté until soft.
  3. Stir in the chicken ham, black beans, corn, diced tomatoes, and chicken broth.
  4. Add the taco seasoning and bring to a simmer.
  5. Mix in the cream and let cook for an additional 5 minutes.
  6. Serve hot, topped with shredded cheese and bacon pieces.

Notes

  • For a spicier soup, add jalapeños or hot sauce.
  • Great served with tortilla chips.
