Hearty Cheddar Garlic Herb Potato Soup Recipe

A deliciously creamy soup recipe, packed with cheddar cheese, garlic, herbs, and turkey bacon.

Ingredients

  • 4 cups diced potatoes
  • 1 cup chopped turkey bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped onion
  • 3 cloves minced garlic
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon dried thyme
  • 1 tablespoon dried parsley
  • salt and pepper to taste

Instructions

  1. Cook turkey bacon in a large pot until crispy, then remove and set aside.
  2. In the same pot, sauté onions and garlic until translucent.
  3. Add the diced potatoes and chicken broth, and bring to a boil.
  4. Reduce heat and simmer until the potatoes are tender.
  5. Stir in the heavy cream, cheddar cheese, thyme, parsley, and cooked bacon.
  6. Season with salt and pepper, and serve hot.

Notes

  • For a vegetarian option, omit turkey bacon and use vegetable broth.
  • Top with extra cheddar cheese and fresh herbs for garnish.
