Hearty Cheddar Garlic Herb Potato Soup Recipe

  • 4 large potatoes, peeled and diced
  • 1 cup cheddar cheese, shredded
  • 4 slices turkey bacon, cooked and crumbled
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons fresh herbs (parsley, thyme, or dill), chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine the diced potatoes, onion, garlic, and chicken broth. Bring to a boil.
  2. Reduce heat and simmer for about 20 minutes, or until the potatoes are tender.
  3. Using a potato masher, mash some of the potatoes for a creamy texture while leaving some chunks for heartiness.
  4. Stir in the heavy cream, cheddar cheese, and crumbled turkey bacon.
  5. Add the fresh herbs and season with salt and pepper. Cook for another 5 minutes until heated through.
  6. Serve hot, garnished with extra herbs and cheese if desired.
