- 4 large potatoes, peeled and diced
- 1 cup cheddar cheese, shredded
- 4 slices turkey bacon, cooked and crumbled
- 1 medium onion, diced
- 4 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons fresh herbs (parsley, thyme, or dill), chopped
- Salt and pepper to taste
- In a large pot, combine the diced potatoes, onion, garlic, and chicken broth. Bring to a boil.
- Reduce heat and simmer for about 20 minutes, or until the potatoes are tender.
- Using a potato masher, mash some of the potatoes for a creamy texture while leaving some chunks for heartiness.
- Stir in the heavy cream, cheddar cheese, and crumbled turkey bacon.
- Add the fresh herbs and season with salt and pepper. Cook for another 5 minutes until heated through.
- Serve hot, garnished with extra herbs and cheese if desired.
