  • 1 cup natural peanut butter
  • 1/2 cup honey or maple syrup
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup gluten-free oats

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the peanut butter, honey (or maple syrup), eggs, and vanilla extract. Mix until well combined.
  4. In another bowl, combine the gluten-free oats, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fill each muffin liner about 2/3 full with the batter.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
