Grandma’s Coconut Cream Pie

  • 1 1/2 cups sweetened shredded coconut
  • 2 cups whole milk
  • 3/4 cup granulated sugar
  • 1/3 cup cornstarch
  • 1/4 teaspoon salt
  • 2 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 teaspoon pure vanilla extract
  • 1 pre-baked pie crust
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a saucepan, combine coconut, milk, sugar, cornstarch, and salt. Cook over medium heat, whisking constantly until it thickens.
  2. In a small bowl, whisk the egg yolks. Gradually add some of the hot mixture to the yolks, then return everything to the saucepan and cook for another 2 minutes.
  3. Remove from heat and stir in butter and vanilla. Pour into the pie crust.
  4. Chill for at least 4 hours until set.
  5. In a bowl, whip heavy cream with powdered sugar and vanilla until soft peaks form. Spread over the pie before serving.
