- 1 1/2 cups sweetened shredded coconut
- 2 cups whole milk
- 3/4 cup granulated sugar
- 1/3 cup cornstarch
- 1/4 teaspoon salt
- 2 large egg yolks
- 2 tablespoons unsalted butter
- 1 teaspoon pure vanilla extract
- 1 pre-baked pie crust
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
- In a saucepan, combine coconut, milk, sugar, cornstarch, and salt. Cook over medium heat, whisking constantly until it thickens.
- In a small bowl, whisk the egg yolks. Gradually add some of the hot mixture to the yolks, then return everything to the saucepan and cook for another 2 minutes.
- Remove from heat and stir in butter and vanilla. Pour into the pie crust.
- Chill for at least 4 hours until set.
- In a bowl, whip heavy cream with powdered sugar and vanilla until soft peaks form. Spread over the pie before serving.
