- 4 chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- 2 cups mashed potatoes
- 1 pound carrots, sliced
- 2 tablespoons butter
- 1 tablespoon brown sugar
- Salt and pepper to taste
- Preheat the oven to 400°F (200°C).
- In a large skillet over medium heat, add olive oil and garlic, cooking until fragrant.
- Add chicken breasts, season with salt and pepper, and sear for 5 minutes on each side.
- Transfer the skillet to the oven and bake for 20 minutes or until cooked through.
- Meanwhile, boil peeled potatoes until tender, then mash with butter, salt, and pepper.
- In another pot, sauté carrots in a bit of butter and sprinkle with brown sugar until glazed.
- Serve the chicken alongside mashed potatoes and glazed carrots.
