Easy Low Carb Chicken Casserole

A delicious and healthy twist on traditional chicken casserole, using turkey bacon for a low-carb option.

  • 2 cups cooked, shredded chicken
  • 1 cup turkey bacon, crumbled
  • 1 cup broccoli florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1/2 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, crumbled turkey bacon, broccoli, and cheddar cheese.
  3. In another bowl, mix softened cream cheese, sour cream, garlic powder, onion powder, salt, and black pepper until smooth.
  4. Pour the cream mixture over the chicken mixture and stir until well combined.
  5. Transfer the mixture to a greased baking dish and spread evenly.
  6. Bake for 25-30 minutes or until the casserole is heated through and bubbly on top.

Notes

  • This casserole can be prepared in advance and stored in the refrigerator before baking.
  • Feel free to substitute other low-carb vegetables for the broccoli.
