Easy Creamy Lasagna Soup

A warm and comforting soup that offers all the flavors of traditional lasagna in a creamy, hearty broth.

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) crushed tomatoes
  • 4 cups beef broth
  • 1 tsp Italian seasoning
  • 8 oz lasagna noodles, broken
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add the diced onion and garlic; sauté until softened.
  3. Stir in crushed tomatoes, beef broth, and Italian seasoning. Bring to a boil.
  4. Add the broken lasagna noodles and cook until tender.
  5. Reduce heat and stir in ricotta, mozzarella, and Parmesan cheeses.
  6. Add spinach and mix until wilted. Season with salt and pepper.
  7. Serve hot, garnished with additional cheese if desired.

Notes

  • This soup is great for leftovers and freezes well.
  • Adjust the thickness by adding more or less broth.
