A delicious and easy recipe for chicken thighs and rice casserole, featuring turkey bacon for added flavor.

  • 4 chicken thighs
  • 1 cup rice
  • 2 cups chicken broth
  • 1 cup turkey bacon, chopped
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup mixed vegetables

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook turkey bacon until crispy; remove from skillet and set aside.
  3. In the same skillet, sauté the onion and garlic until translucent.
  4. Add rice to the skillet and stir for 2 minutes.
  5. Add chicken broth, paprika, salt, and pepper; bring to a boil.
  6. Transfer the mixture to a casserole dish and place chicken thighs on top.
  7. Add the cooked turkey bacon and mixed vegetables on top of the chicken.
  8. Cover with foil and bake for 35-40 minutes, or until chicken is cooked through.
  9. Remove foil and bake for an additional 10 minutes to brown the chicken.
  10. Let it cool for a few minutes before serving.

Notes

  • For added flavor, marinate chicken thighs in spices for a few hours before cooking.
