- 4 chicken thighs
- 1 cup rice
- 2 cups chicken broth
- 1 cup turkey bacon, chopped
- 1 onion, diced
- 2 garlic cloves, minced
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup mixed vegetables
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook turkey bacon until crispy; remove from skillet and set aside.
- In the same skillet, sauté the onion and garlic until translucent.
- Add rice to the skillet and stir for 2 minutes.
- Add chicken broth, paprika, salt, and pepper; bring to a boil.
- Transfer the mixture to a casserole dish and place chicken thighs on top.
- Add the cooked turkey bacon and mixed vegetables on top of the chicken.
- Cover with foil and bake for 35-40 minutes, or until chicken is cooked through.
- Remove foil and bake for an additional 10 minutes to brown the chicken.
- Let it cool for a few minutes before serving.
Notes
- For added flavor, marinate chicken thighs in spices for a few hours before cooking.
