  • 1 cup corn, grilled
  • 1/2 cup cherry tomatoes, halved
  • 1 cup turkey bacon, cooked and crumbled
  • 1/2 cup red onion, diced
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons lime juice
  • 1 tablespoon cilantro, chopped
  • salt to taste
  • pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and set aside to cool.
  2. In a large bowl, combine the grilled corn, cherry tomatoes, turkey bacon, and red onion.
  3. Add the cooled pasta to the vegetable mixture.
  4. In a separate bowl, whisk together the mayonnaise, sour cream, lime juice, cilantro, salt, and pepper.
  5. Pour the dressing over the pasta mixture and stir until well combined.
  6. Chill in the refrigerator for at least 30 minutes before serving.
