A rich and flavorful twist on the classic Reuben sandwich, this creamy soup combines turkey bacon and chicken ham for a delightful meal.

  • 4 slices turkey bacon
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup sauerkraut, drained
  • 1 cup cooked chicken ham, diced
  • 1 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon caraway seeds
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble, leaving the drippings in the pot.
  2. Add the chopped onion and garlic to the pot and sauté until translucent.
  3. Stir in the chicken broth, sauerkraut, and diced chicken ham. Bring to a simmer.
  4. Mix in the heavy cream, Dijon mustard, and caraway seeds.
  5. Season with salt and pepper. Simmer for another 10 minutes.
  6. Serve hot, garnished with crumbled turkey bacon and chopped parsley.

Notes

  • For a vegetarian version, omit the turkey bacon and chicken ham.
  • Adjust the thickness of soup by adding more or less cream.
