Creamy Cajun Chicken Pasta

  • 1 pound chicken breast, diced
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup bell peppers, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup parmesan cheese, grated
  • salt to taste
  • pepper to taste

Instructions

  1. Cook the penne pasta according to package instructions, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the diced chicken and season with Cajun seasoning. Cook until browned and fully cooked.
  3. Add the onion, bell peppers, and garlic to the skillet. Sauté until the vegetables are tender.
  4. Pour in the chicken broth and bring to a simmer. Then, stir in the heavy cream and cheese, and mix until well combined.
  5. Add the cooked pasta to the skillet and toss to coat with the sauce. Season with salt and pepper to taste.
  6. Serve warm, garnished with additional parmesan cheese if desired.

Notes

  • For a spicier dish, add more Cajun seasoning or some crushed red pepper flakes.
  • This dish can be made ahead of time and reheated; just add a splash of chicken broth to loosen the sauce when reheating.
