- 1 pound butternut squash, peeled and cubed
- 1 package gnocchi
- 6 slices turkey bacon, chopped
- 1 pound Italian sausage, casings removed
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon sage
- Salt and pepper to taste
- Heat a large skillet over medium heat and cook the turkey bacon until crispy. Remove and set aside.
- In the same skillet, add the sausage and cook until browned.
- Add the garlic and butternut squash, cooking until the squash is tender.
- Stir in the heavy cream and Parmesan cheese, and let it simmer.
- Cook the gnocchi according to package instructions and add to the skillet.
