Creamy Butternut Squash Gnocchi with Sausage Recipe

Ingredients

  • 1 pound butternut squash, peeled and cubed
  • 1 package gnocchi
  • 6 slices turkey bacon, chopped
  • 1 pound Italian sausage, casings removed
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon sage
  • Salt and pepper to taste

Instructions

  1. Heat a large skillet over medium heat and cook the turkey bacon until crispy. Remove and set aside.
  2. In the same skillet, add the sausage and cook until browned.
  3. Add the garlic and butternut squash, cooking until the squash is tender.
  4. Stir in the heavy cream and Parmesan cheese, and let it simmer.
  5. Cook the gnocchi according to package instructions and add to the skillet.
  6. Combine everything together, season with sage, salt, and pepper, and serve with crispy bacon on top.
