Cowboy Caviar

A bright and colorful dip that brings a burst of flavor to any event.

Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup diced tomatoes
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/2 cup red onion, diced
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large bowl, combine the black beans, corn, diced tomatoes, red bell pepper, green bell pepper, red onion, jalapeño, and cilantro.
  2. In a separate bowl, whisk together the olive oil, red wine vinegar, lime juice, salt, and black pepper.
  3. Pour the dressing over the bean mixture and stir gently to combine.
  4. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve with tortilla chips or as a topping for tacos.

Notes

  • This dip can be made a day in advance for an even better flavor.
  • Feel free to add more or less jalapeño based on your spice tolerance.
