  • 2 cups shredded chicken
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, drained
  • 1 cup diced bell pepper
  • 1 cup shredded cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 package egg roll wrappers
  • oil for frying

Instructions

  1. In a large bowl, combine chicken, black beans, corn, bell pepper, cheese, cumin, and chili powder.
  2. Lay out an egg roll wrapper and place about 2 tablespoons of filling in the center.
  3. Fold the sides over the filling and then roll tightly to seal.
  4. Heat oil in a deep pan over medium-high heat.
  5. Fry the egg rolls until golden brown on all sides, about 2-3 minutes each.
  6. Drain on paper towels and serve hot.
