- 1 package cream cheese
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup sour cream
- 1 tablespoon ground cinnamon
- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- Preheat the oven to 325°F (160°C).
- In a mixing bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a springform pan.
- In another bowl, beat the cream cheese until smooth. Gradually add the sugar and vanilla extract, mixing well.
- Add the eggs, one at a time, mixing until incorporated. Then, mix in the sour cream.
- Pour the cheesecake filling over the crust in the springform pan.
- Bake for about 50-60 minutes, or until the center is set. Allow to cool.
- Chill in the refrigerator for at least 4 hours before serving.
- Before serving, sprinkle with cinnamon sugar for a churro-like finish.
