  • 8 ounces bittersweet chocolate, chopped
  • 2 tablespoons powdered sugar
  • 1 teaspoon instant coffee granules

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a saucepan, melt the butter and stir in the sugar until combined.
  3. Remove from heat and let cool slightly, then whisk in eggs and vanilla.
  4. Add flour, cocoa powder, and salt, mixing until just combined.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes.
  6. While the brownies are baking, prepare the mousse by melting chocolate in a bowl over simmering water.
  7. In a separate bowl, whip the heavy cream, powdered sugar, and coffee granules until soft peaks form.
  8. Fold the melted chocolate into the whipped cream until smooth.
  9. Once brownies are cooled, spread the mousse over the top and refrigerate until set.
