Chicken Wild Rice Casserole

A delicious and comforting chicken wild rice casserole enriched with turkey bacon and chicken ham, perfect for a family meal.

  • 1 cup wild rice
  • 2 cups chicken broth
  • 1 cup cooked chicken, shredded
  • 1 cup turkey bacon, diced
  • 1/2 cup chicken ham, diced
  • 1 cup diced onions
  • 1 cup diced celery
  • 2 cups mixed vegetables
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large pot, combine the wild rice and chicken broth, and bring to a boil. Reduce heat, cover, and simmer for 45 minutes.
  3. In a large mixing bowl, combine the cooked rice, chicken, turkey bacon, chicken ham, onions, celery, mixed vegetables, garlic powder, onion powder, salt, and pepper.
  4. Transfer the mixture to a greased casserole dish and top with shredded cheese if desired.
  5. Bake for 30-35 minutes or until heated through and the top is golden brown.

Notes

  • You can substitute any vegetables you prefer.
  • For a creamier casserole, add a can of cream of chicken soup to the mixture.
