- 1 cup wild rice
- 2 cups chicken broth
- 1 cup cooked chicken, shredded
- 1 cup turkey bacon, diced
- 1/2 cup chicken ham, diced
- 1 cup diced onions
- 1 cup diced celery
- 2 cups mixed vegetables
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheese (optional)
- Preheat the oven to 350°F (175°C).
- In a large pot, combine the wild rice and chicken broth, and bring to a boil. Reduce heat, cover, and simmer for 45 minutes.
- In a large mixing bowl, combine the cooked rice, chicken, turkey bacon, chicken ham, onions, celery, mixed vegetables, garlic powder, onion powder, salt, and pepper.
- Transfer the mixture to a greased casserole dish and top with shredded cheese if desired.
- Bake for 30-35 minutes or until heated through and the top is golden brown.
Notes
- You can substitute any vegetables you prefer.
- For a creamier casserole, add a can of cream of chicken soup to the mixture.
