- 2 cups cooked rice
- 1 pound chicken breast, diced
- 2 medium sweet potatoes, peeled and cubed
- 4 strips turkey bacon, chopped
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon paprika
- Salt and pepper to taste
- Preheat oven to 400°F (200°C).
- In a large bowl, toss sweet potatoes with olive oil, garlic, paprika, salt, and pepper. Spread on a baking sheet and roast for 25 minutes.
- Meanwhile, cook turkey bacon in a skillet until crispy. Remove and set aside.
- In the same skillet, add diced chicken and cook until golden and cooked through, about 7-10 minutes.
- Once sweet potatoes are done, combine with rice and chicken in a bowl. Top with crispy turkey bacon.
- Serve warm and enjoy!
