Chicken Alfredo Lasagna Rolls

  • 9 lasagna noodles
  • 2 cups cooked chicken, shredded
  • 2 cups ricotta cheese
  • 1.5 cups mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 2 cups creamy Alfredo sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions, then drain and set aside.
  3. In a mixing bowl, combine shredded chicken, ricotta cheese, 1 cup of mozzarella, parmesan, garlic powder, Italian seasoning, salt, and pepper.
  4. Spread a layer of Alfredo sauce in the bottom of a baking dish.
  5. Lay a lasagna noodle flat and spread some of the chicken mixture over it. Roll it up and place it seam-side down in the baking dish. Repeat with remaining noodles and filling.
  6. Pour remaining Alfredo sauce over the rolls and sprinkle with the rest of the mozzarella cheese.
  7. Bake uncovered for 25-30 minutes or until bubbly and golden.

Notes

  • For added flavor, you can include spinach or mushrooms in the filling.
  • Leftover rolls can be refrigerated and reheated in the oven.
