- 1 can chipotle beans
- 2 cups shredded cheese
- 4 large tortillas
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon cumin
- 1 jalapeno, diced
- 1/4 cup chopped cilantro
- In a bowl, mash the chipotle beans and mix in garlic powder, cumin, jalapeno, and cilantro.
- Heat olive oil in a skillet over medium heat.
- Place a tortilla in the skillet, and spread half of the bean mixture on one half of the tortilla.
- Sprinkle with cheese, fold over the tortilla, and cook until golden brown on both sides.
- Repeat with remaining tortillas and filling.
- Slice and serve with salsa or sour cream.
Notes
