2 ripe bananas
1 cup grated carrots
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 cup vegetable oil
3 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
3/4 cup walnuts, chopped
1/2 cup raisins
Instructions
Preheat your oven to 350°F (175°C) and grease a loaf pan.
In a large bowl, mash the bananas.
Add in the grated carrots, sugars, oil, eggs, and vanilla; mix well.
In another bowl, combine the dry ingredients: flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
Gradually mix the dry ingredients into the wet mixture until just combined.
Fold in the walnuts and raisins.
Pour the batter into the prepared loaf pan.
Bake for 60-70 minutes or until a toothpick inserted comes out clean.
