4 large eggs
1 teaspoon vanilla extract
1 cup buttermilk
3 ripe bananas, mashed
1 package vanilla pudding mix
2 cups milk
1 cup whipped cream
Instructions
Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
In a bowl, combine flour, baking powder, baking soda, and salt.
In a separate bowl, beat together the butter and sugar until light and fluffy.
Add the eggs one at a time, mixing well after each addition, then stir in vanilla extract.
Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk.
Fold in the mashed bananas until well incorporated.
Divide the batter evenly between the prepared pans and smooth the tops.
Bake for 25-30 minutes or until a toothpick comes out clean.
Let the cakes cool completely before removing from pans.
Prepare the pudding by whisking the pudding mix with milk until thick.
Layer one cake with pudding, add whipped cream and the second cake on top.
Frost the top with additional whipped cream and garnish with banana slices.
Notes
For a richer flavor, use brown sugar instead of granulated sugar.
