Ingredients

  • 1 cup rolled oats
  • 1 cup protein powder
  • 2 tablespoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk of choice
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup Greek yogurt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the rolled oats, protein powder, baking powder, and salt.
  3. In another bowl, whisk together the milk, eggs, vanilla extract, and Greek yogurt.
  4. Combine the wet and dry ingredients until well mixed.
  5. Pour the mixture into a greased baking dish and spread evenly.
  6. Bake for 25-30 minutes, or until golden brown.
  7. Let cool for a few minutes before slicing.

Notes

  • These pancakes can be stored in the fridge for up to 5 days.
  • Can be frozen for longer storage.
