Bacon Cheddar Gnocchi Soup – A Rich and Creamy Comfort Meal

Ingredients

  • 4 slices bacon
  • 1 cup onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 pound gnocchi
  • 1 cup cheddar cheese, shredded
  • 1 cup heavy cream
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the bacon until crispy. Remove and chop into pieces.
  2. In the same pot, sauté the onion and garlic until softened.
  3. Add the chicken broth and bring to a boil.
  4. Add the gnocchi and cook according to package instructions.
  5. Reduce heat and stir in the cheddar cheese and heavy cream until melted and combined.
  6. Season with black pepper and stir in the chopped bacon before serving.

Notes

  • This soup is best enjoyed fresh but can be stored in the fridge for up to 3 days.
  • For a vegetarian option, omit the bacon and use vegetable broth.
