  • 1 cup wild rice
  • 4 cups chicken broth
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup turkey bacon, chopped
  • 1 cup chicken ham, diced
  • 2 teaspoons thyme
  • 1 teaspoon black pepper
  • 1 bay leaf
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped turkey bacon and cook until crispy.
  2. Add diced onion, carrots, and celery. Sauté until softened.
  3. Stir in minced garlic and thyme, cooking for an additional minute.
  4. Add wild rice and chicken broth to the pot. Bring to a boil, then reduce heat and simmer for 40-50 minutes, or until rice is tender.
  5. Stir in diced chicken ham and season with black pepper and bay leaf. Simmer for another 10 minutes.
  6. Remove bay leaf before serving.
