African Chicken Curry – Kuku Paka

  • 2 pounds chicken, cut into pieces
  • 1 can coconut milk
  • 2 tablespoons curry powder
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tablespoons vegetable oil
  • 1 bell pepper, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup cilantro, chopped

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the onions, garlic, and ginger; sauté until fragrant.
  3. Stir in the curry powder and cook for another minute.
  4. Add the chicken pieces and cook until browned on all sides.
  5. Pour in the coconut milk and bring to a simmer.
  6. Add the chopped bell pepper, salt, and black pepper; stir to combine.
  7. Cover and simmer for 30 minutes, until the chicken is cooked through.
